At the heart ofExperimental Group expertise, the Bar offers a sophisticated and daring selection of wines as well as classic and signature cocktails, to be sipped in the extravagant Belle Epoque setting of our Atrium, or in the intimacy of a small lounge.
Our restaurant is open every day from 10 a.m. to midnight.
The kitchen is open from noon to 10:30 p.m. to accompany your time at the bar with a gourmet snack.

Reinventing the score of a 1920s cocktail piano bar, a huge liner-like counter pays homage to architect Eileen Gray, sofas play on the shapes of the Itsasoan footbridge in Guéthary, creating many warm, intimate spaces with hanging paper lamps by Ingo Maurer and Anthony Dickens.

A long-standing passion of the Experimental, our cocktail menu invites you to discover the following as an aperitif: Egarri Naiz, Brana Corsican Clementine, Patxaran Egiazki, Del Professore white vermouth with jasmine, or Citrus Time, a balanced blend of Acrobate Gin, pomelo cordial, Timut pepper, thyme, and yuzu.
The gourmet snack menu invites you to share it all: smoked bacon scones, sheep’s milk Tome cheese gougères, ham croquettes, fish ceviche, club sandwiches, and Basque Country charcuterie boards. Cocktail and snack menu below.
